Prep the squash:
- 1 ¾ lb. butternut squash
- Peeled and cut in 3/8 inch slices
- 1tbs. olive oil
- 1/8 tsp cayenne pepper
- Chopped fresh cilantro and lemon for garnish
Prep the mayo:
- 1/2 cup mayonnaise
- 2 tsp lemon juice
- 1/2 tsp garam masala
- 1/2 tsp turmeric
- 1/2 tsp hot paprika
- 1/8 salt
Prepare the squash:
- Pre heat oven to 450.
- Place sliced squash in a bowl and toss with oil, salt and cayenne to coat.
- Arrange squash in a single layer on a foil lined baking sheet coated with cooking spray. Bake until tender and bottoms are well browned, 12-18 minutes. Transfer to a serving platter and squeeze fresh lemon.
For the mayo:
Whisk together mayonnaise, lemon juice, garam masala, turmeric, paprika and salt in a small bowl. If needed add 1tsp water to thin out. Serve with roasted squash.
