For the squash:
1 ¾ lb. butternut squash
Peeled and cut in 3/8 inch slices
1tbs. olive oil
1/8 tsp cayenne pepper
Chopped fresh cilantro and lemon for garnish
For the mayo:
1/2 cup mayonnaise
2 tsp lemon juice
1/2 tsp garam masala
1/2 tsp turmeric
1/2 tsp hot paprika
1/8 salt
Prepare squash:
1. Pre heat oven to 450.
2. Place sliced squash in a bowl and toss with oil, salt and cayenne to coat.
3. Arrange squash in a single layer on a foil lined baking sheet coated with cooking spray. Bake until tender and bottoms are well browned, 12-18 minutes. Transfer to a serving platter and squeeze fresh lemon.
For the mayo:
1. Whisk together mayonnaise, lemon juice, garam masala, turmeric, paprika and salt in a small bowl. If needed add 1tsp water to thin out. Serve with roasted squash.
